- Purchase a kit. Even if you use different candy decor, the structure is well baked and easy to assemble.
- If you are baking your gingerbread pieces. Allow them to cool completely before you take them off the sheet pan. Store in a plastic container overnight in the fridge with baking paper between layers, to crisp thoroughly.
- Plan out the design. Look at gingerbread house ideas to figure out how you want to do the door, windows, roof, and anything else you wish to add.
- Decorate the walls flat then assemble. A flat surface gives you control and prevents icing drips.
- Build your gingerbread house where it’s going to stay. Avoid building it somewhere else & then transporting it to prevent collapses.
- Don’t hold back with the royal icing. To hold together large pieces you will need more than you think.
- Use glue if you aren’t planning to eat it. If it’s more about the fun of building & displaying it, use a hot glue gun to keep it together.
- Cover it in powdered sugar. A dusting of powdered sugar can fix small mistakes you made.
